This one-bowl banana bread is moist, tender, and packed with banana flavor. It comes together in just 10 minutes of active time and uses simple pantry ingredients. Perfect for busy families, it’s kid-approved and freezes beautifully.

Ingredients

Scale
  • 3 medium very ripe bananas (about 1 1/2 cups mashed)
  • 1/3 cup unsalted butter, melted and cooled
  • 1/2 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup optional mix-ins (chocolate chips, chopped walnuts, or blueberries)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray. Optionally line with parchment paper, leaving overhang on long sides.
  2. In a large mixing bowl, mash the bananas with a fork until mostly smooth with a few small lumps.
  3. Add melted butter and stir until combined.
  4. Mix in sugar, egg, and vanilla until smooth and glossy.
  5. Sprinkle flour, baking soda, and salt over the wet mixture. Stir gently until just combined (about 10-12 strokes). Do not overmix.
  6. Fold in any mix-ins (chocolate chips, walnuts, or blueberries) with a few gentle strokes.
  7. Pour batter into prepared pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If top browns too quickly, tent with foil after 40 minutes.
  9. Cool in pan for 10 minutes, then lift out using parchment handles and transfer to a wire rack to cool completely.
  10. Slice and serve at room temperature or slightly warm.

Notes

Use very ripe, spotty bananas for best flavor and sweetness. Do not overmix the batter to avoid tough bread. For a deeper flavor, substitute half the granulated sugar with brown sugar. To test baking soda freshness, drop a little into vinegar; it should bubble vigorously. If using frozen bananas, thaw and drain excess liquid before mashing.
