  • 1 lb ground beef (80/20 recommended)
  • 1 packet taco seasoning (or homemade blend)
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa (medium-heat restaurant-style preferred)
  • Tortilla chips, for serving
  • Optional garnishes: chopped green onions, sliced black olives, diced tomatoes, fresh cilantro, or a drizzle of sour cream

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat, breaking it up with a spatula, until no longer pink (6-8 minutes). Drain excess fat, leaving about 1 tablespoon in the pan.
  2. Sprinkle taco seasoning over the cooked beef and add 1/4 cup water. Stir and simmer for 2-3 minutes until liquid thickens and coats the meat.
  3. While beef cooks, cut cream cheese into cubes and let soften at room temperature (or microwave in 10-second bursts until soft).
  4. In a mixing bowl, combine softened cream cheese, sour cream, and pumpkin puree. Stir until smooth and uniform in color.
  5. Stir in salsa until fully incorporated.
  6. Add seasoned ground beef to the creamy mixture and stir until evenly distributed. Fold in half of the shredded cheddar cheese.
  7. Transfer dip to a serving dish and spread into an even layer. Sprinkle remaining cheddar cheese on top. Microwave for 30 seconds to melt cheese if desired, or let residual heat do the work.
  8. Garnish with optional toppings and serve immediately with tortilla chips.

Use 100% pure pumpkin puree, not pumpkin pie filling. Let the dip rest for 10-15 minutes before serving for best flavor and texture.
