  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary, crushed
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1 tablespoon olive oil

Instructions

  1. Pat the pork chops completely dry with paper towels.
  2. In a small bowl, combine garlic powder, onion powder, dried thyme, crushed dried rosemary, dried oregano, smoked paprika, kosher salt, and black pepper. Stir together with a fork.
  3. Drizzle olive oil over the pork chops and rub it in with your hands to create a thin, even coating.
  4. Sprinkle the garlic herb rub generously over both sides of each pork chop, pressing it in gently with your fingers. Use all of the rub.
  5. Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  6. Place the pork chops in the air fryer basket in a single layer, ensuring they are not overcrowded. Cook in batches if necessary.
  7. Air fry at 400°F (200°C) for 6 minutes, then flip the pork chops using tongs and cook for another 4-6 minutes, until the internal temperature reaches 145°F (63°C) in the thickest part.
  8. Transfer the pork chops to a cutting board and let them rest for 3-5 minutes before serving.

Notes

For best results, let the rubbed pork chops sit at room temperature for 5 minutes while the air fryer preheats. Always use a meat thermometer to ensure doneness at 145°F. Let the pork chops rest after cooking to keep them juicy. For thicker chops (1.5 inches), increase cooking time to 14-16 minutes total.
