  • 1 tablespoon salt, for the blanching water
  • 3 tablespoons unsalted butter
  • 8 ounces cremini mushrooms, sliced (about 225g)
  • 1 small yellow onion, finely diced (about 1 cup)
  • 3 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 1 ½ cups whole milk (360ml)
  • ½ cup heavy cream (120ml)
  • ½ teaspoon salt, plus more to taste
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder (optional)
  • Pinch of nutmeg
  • 1 cup French fried onions (about 60g)
  • ¼ cup panko breadcrumbs (optional)

Instructions

  1. Fill a large pot with water and bring to a rolling boil. Trim the ends off the green beans and cut into 2-inch pieces. Once boiling, add 1 tablespoon salt and the green beans. Cook for exactly 3 minutes until tender-crisp and bright green.
  2. While beans boil, fill a large bowl with ice water. After 3 minutes, drain the beans and immediately transfer to the ice water bath for 2 minutes. Drain well and set aside.
  3. In a large skillet, melt 3 tablespoons butter over medium-high heat. Add sliced mushrooms and cook without stirring for 2 minutes, then stir and cook another 2 minutes until golden brown. Add diced onion and cook 3-4 minutes until soft. Add minced garlic and cook 30 seconds until fragrant.
  4. Sprinkle flour over the mushroom mixture and stir constantly for 1 minute. Slowly pour in the milk while stirring continuously. Cook for about 2 minutes until sauce thickens and bubbles. Stir in heavy cream, salt, pepper, garlic powder, and nutmeg until smooth and creamy.
  5. Add the blanched green beans to the skillet and stir gently until coated. Heat through for 2-3 minutes. Taste and adjust seasoning.
  6. Sprinkle French fried onions over the top. If using panko, mix with onions. For baked version, transfer to a greased 9×9-inch baking dish and bake at 375°F (190°C) for 10 minutes. Alternatively, serve straight from the skillet.
  7. Serve immediately while the onions are still crispy.

Notes

Don’t skip the ice bath—it keeps the green beans bright green and crisp-tender. Let mushrooms brown properly for maximum flavor. If sauce gets lumpy, whisk vigorously or strain through a fine-mesh strainer. For make-ahead, prepare casserole without topping up to 24 hours in advance; reheat at 350°F (175°C) for 15 minutes, adding onions during last 5 minutes. Leftovers keep in refrigerator for up to 4 days. Freeze for up to 3 months.
