Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and set it aside.
  2. Wash the delicata squash thoroughly. Trim off both ends and slice crosswise into ½-inch thick rings. Scoop out the seeds and stringy pulp from the center.
  3. In one medium bowl, whisk the eggs until fully combined. Add a pinch of salt and pepper to the eggs. In another bowl, combine the grated Parmesan, panko breadcrumbs, garlic powder, paprika, salt, and black pepper. Stir until evenly distributed.
