This quick Kentucky Derby pie with bourbon chocolate chips is the kind of recipe that makes you look like a hero with almost zero effort. It comes together in under 10 minutes of active prep time and uses simple ingredients you likely already have in your kitchen.

Ingredients

Scale
  • 1 (9-inch) unbaked pie crust
  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons bourbon
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 3/4 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the pie crust. If using a store-bought crust, let it sit at room temperature for 10 minutes before pressing it into your pie dish. Crimp the edges with your fingers or a fork. Place it in the fridge while you make the filling.
  3. Toss the chocolate chips with bourbon. In a small bowl, combine 1 cup chocolate chips and 2 tablespoons bourbon. Stir until every chip is coated. Let this sit while you mix the filling — about 5 minutes.
  4. Melt the butter. In a microwave-safe bowl, melt 1/2 cup unsalted butter in 30-second intervals. Set it aside to cool slightly.
  5. Mix the sugars and eggs. In your large mixing bowl, whisk together 3/4 cup granulated sugar and 1/2 cup packed light brown sugar. Add 3 large eggs and 1 teaspoon vanilla extract. Whisk vigorously for about 1 minute until the mixture is pale and slightly thickened.
  6. Add the melted butter. Slowly pour the slightly cooled butter into the sugar-egg mixture while whisking constantly.
  7. Fold in the dry ingredients. Sprinkle 1/2 cup all-purpose flour and 1/4 teaspoon salt over the wet mixture. Use your rubber spatula to fold gently — just until no streaks of flour remain.
  8. Add the bourbon-soaked chocolate chips. Scrape the chocolate chips and any remaining bourbon into the batter. If you’re using nuts, add 1 cup chopped pecans or walnuts now. Fold gently to distribute everything evenly.
  9. Pour into the crust. Take your chilled pie crust out of the fridge. Pour the filling in, spreading it evenly with your spatula.
  10. Bake for 40-45 minutes. Place the pie on the middle rack of your preheated oven. Bake until the edges are set and the center is just slightly jiggly — like a firm custard. A toothpick inserted near the center should come out with a few moist crumbs, not wet batter. If the crust edges are browning too quickly, tent them with foil strips around the 25-minute mark.
  11. Cool completely before slicing. Let the pie cool on a wire rack for at least 2 hours. For clean slices, refrigerate for 30 minutes after cooling.

Notes

Don’t overmix the batter. Toast your nuts first if using. Watch the baking time carefully. Let it cool completely before slicing. Use a glass pie dish for best results.
