A bright and comforting chicken noodle soup that tastes like it simmered all day but comes together in just 30 minutes. The secret is fresh lemon and dill, which cut through the richness and make every spoonful feel like sunshine.

  • 1 medium yellow onion, diced (about 1 cup)
  • 2 medium carrots, peeled and diced (about 1 cup)
  • 2 celery stalks, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 pound boneless, skinless chicken breasts or thighs
  • 1 ½ cups wide egg noodles
  • ¼ cup fresh lemon juice (about 2 lemons)
  • 2 tablespoons fresh dill, chopped
  • 1 teaspoon lemon zest
  • Salt and black pepper to taste
  • ½ cup heavy cream or full-fat coconut milk (optional)
  • Pinch of red pepper flakes (optional)
  • Fresh parsley, chopped (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until the vegetables start to soften and the onion turns translucent.
  2. Add the minced garlic and cook for 30 seconds, stirring constantly.
  3. Pour in the chicken broth and bring it to a boil. Season the chicken with a pinch of salt and pepper on both sides. Once the broth is boiling, carefully add the chicken to the pot. Reduce the heat to medium-low, cover, and let it simmer for 12-15 minutes, or until the chicken is cooked through and reaches 165°F internally.
  4. Remove the chicken from the pot using tongs and place it on a cutting board. Let it rest for 2-3 minutes, then shred it using two forks or chop into small bite-sized pieces.
  5. Add the egg noodles to the simmering broth and cook according to package directions, usually 6-8 minutes. Stir occasionally to prevent sticking.
  6. Return the shredded chicken to the pot. Stir in the fresh lemon juice, lemon zest, and chopped dill. Taste and adjust seasoning with salt and pepper as needed.
  7. Remove from heat and let the soup sit for 2-3 minutes. Ladle into bowls and garnish with extra fresh dill and a lemon slice if desired.

Notes

For best results, add lemon juice off the heat to avoid bitterness. If making ahead, cook noodles separately and add when reheating to prevent mushiness. Shred chicken while warm for better texture.
