Quick Monster Eyeball Deviled Eggs Easy Halloween Recipe

These creepy and fun Monster Eyeball Deviled Eggs are a quick and easy Halloween treat that looks like you spent hours on it. Perfect for last-minute parties, they combine classic deviled eggs with a spooky olive eyeball twist.

Ingredients

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon yellow mustard
  • 1 teaspoon white vinegar
  • Salt and black pepper to taste
  • Pinch of paprika
  • 1 can (6 ounces) large pitted black olives
  • 1 jar (4 ounces) pimentos
  • Optional: a few drops of red food coloring mixed with 1 teaspoon water

Instructions

  1. Place the 6 eggs in a single layer in a saucepan. Cover with cold water by about an inch. Bring to a rolling boil over high heat. Once boiling, cover the pot, turn off the heat, and let sit for exactly 10 minutes.
  2. While the eggs cook, fill a large bowl with ice and cold water. Transfer the eggs to the ice bath and let sit for at least 5 minutes.
  3. Gently crack the eggs all over and peel under cold running water. Pat dry. Slice each egg in half lengthwise. Pop out the yolks into a small mixing bowl. Place the hollowed egg whites on a serving platter.
  4. Add the mayonnaise, mustard, and white vinegar to the bowl with the yolks. Mash together with a fork until smooth and creamy. Season with salt and pepper. Taste and adjust.
  5. Drain the black olives. Slice each olive in half crosswise. Drain the pimentos and cut into small squares (about pea-sized). Gently press a pimento square into the center of each olive half to form the eyeball.
  6. Spoon the yolk mixture into a piping bag or zip-top bag. Snip off a small corner. Pipe a generous swirl of filling into each egg white half, mounding it slightly. Gently press an olive eyeball into the center of each mound.
  7. Optional: For a bloodshot effect, use a small brush to paint thin streaks of red food coloring mixed with water from the center of the eye outward onto the egg white.
  8. Refrigerate the platter for at least 30 minutes to firm up the filling before serving.

Notes

Use older eggs (about a week old) for easier peeling. Pat olive halves dry before adding pimento to prevent watery filling. If olives are slippery, dip the bottom in a bit of filling to help them stick. The flavors meld and improve after a few hours in the fridge.
