  • 6 ounces Black Forest ham, sliced
  • 1 cup black olives, pitted (kalamata or Castelvetrano)
  • 1 cup fresh blackberries
  • 2 tablespoons black sesame seeds
  • 12 drops black food coloring (optional)
  • 1215 skewers, about 6 inches long

Instructions

  1. Cut the black wax gouda into 1-inch cubes. Try to make them uniform so the skewers look balanced. If the wax feels too hard, let the cheese sit at room temperature for 15 minutes.
  2. Fold each slice of Black Forest ham into a loose rose shape. Fold the slice in half, then roll it from one end to the other, tucking the edges under. If the ham is too thin, use two slices together.
  3. Drain the olives and pat them dry with a paper towel.
  4. Gently rinse the blackberries and let them dry completely on a paper towel.
  5. Assemble the skewers: Start with a blackberry at the base, then add a cube of gouda, followed by a ham rose, then an olive. Repeat the pattern until the skewer is full, ending with another blackberry at the top. Each skewer should have 4-5 items total.
  6. Arrange the skewers on your platter in a fan pattern or a starburst shape. Sprinkle the black sesame seeds over the top.
  7. Optional: Use a small brush to apply a tiny amount of black food coloring to the edges of the ham roses or the cheese cubes for extra drama.
  8. Add a few extra olives and blackberries scattered around the board for visual interest.

Notes

Keep cheese and ham cold for easier handling. Don’t overload skewers—stick to 4-5 items per skewer. Toast sesame seeds in a dry pan for 30 seconds to bring out flavor. Prep ingredients a day in advance but assemble no more than 2 hours before serving. For a vegetarian version, skip the ham and add more cheese and olives. For a dairy-free version, use a firm dairy-free cheese alternative.
