The Best Crispy Air Fryer Pork Chops with Herb Butter

These air fryer pork chops are incredibly juicy with a golden, crispy crust and a rich herb butter that melts into every bite. Ready in under 25 minutes, they’re perfect for weeknight dinners or impressing guests.

  • 4 bone-in pork chops, about 1-inch thick
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Olive oil spray
  • 4 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon fresh thyme leaves
  • ½ teaspoon lemon zest
  • Pinch of salt

Instructions

  1. Make the herb butter: In a small bowl, combine softened butter, minced garlic, parsley, chives, thyme, lemon zest, and a pinch of salt. Mash with a fork until evenly mixed. Shape into a log on plastic wrap, twist ends to seal, and refrigerate for at least 15 minutes.
  2. Set up dredging station: In the first bowl, mix flour with ½ teaspoon salt, ½ teaspoon pepper, garlic powder, onion powder, and smoked paprika. In the second, beat eggs with a splash of water. In the third, spread panko breadcrumbs.
  3. Pat pork chops dry with paper towels. Season both sides with salt and pepper.
  4. Dredge each chop: first in seasoned flour (shake off excess), then in beaten eggs (let excess drip), then press into panko to coat both sides. Place on a plate and let rest for 5 minutes.
  5. Preheat air fryer to 400°F for 3-5 minutes.
  6. Lightly spray air fryer basket with olive oil. Arrange chops in a single layer without overcrowding. Spray tops lightly with oil.
  7. Cook at 400°F for 12-14 minutes, flipping halfway through (at 6-7 minutes) and spraying the other side with oil. Internal temperature should reach 145°F.
  8. Transfer chops to a cutting board and let rest for 5 minutes.
  9. Slice chilled herb butter into 4 rounds. Place one round on each hot pork chop. Let melt for 1 minute before serving.

Notes

For best results, use bone-in chops about 1-inch thick. Let coated chops rest 5 minutes before cooking to help coating adhere. Use a meat thermometer to avoid overcooking. Herb butter can be made up to 3 days ahead.
