This ultimate baked brie with honey drizzle is the perfect easy appetizer—warm, gooey cheese wrapped in flaky puff pastry, topped with honey and fresh thyme. Ready in under 30 minutes, it’s a crowd-pleaser for any occasion.

Ingredients

Scale
  • 1 (8-ounce) wheel of brie cheese
  • 1 sheet of puff pastry, thawed
  • 3 tablespoons of honey
  • 1 tablespoon of fresh thyme leaves
  • 1 large egg, beaten
  • Flaky sea salt, for finishing
  • Optional: Fresh figs, sliced almonds, or dried cranberries

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the center of the oven.
  2. Lightly flour your work surface and unfold the thawed puff pastry sheet. Gently roll it out to about 10 inches square.
  3. Using a sharp knife, carefully slice off the top rind of the brie wheel—just the very top, not the sides.
  4. Place the brie wheel in the center of the puff pastry, cut side up. Drizzle 1 tablespoon of honey over the top of the brie. Sprinkle half of the fresh thyme leaves over the honey.
  5. Fold the corners of the puff pastry up and over the brie, one at a time, pressing gently to seal. Pinch any seams to seal them well.
  6. In a small bowl, beat the egg with a fork until smooth. Using a pastry brush, gently brush the egg wash over all the exposed pastry.
  7. Using a sharp knife, make a few small slits in the top of the pastry to allow steam to escape.
  8. Place the wrapped brie on a parchment-lined baking sheet and bake for 20-25 minutes, until the pastry is puffed and deeply golden brown.
  9. Remove from the oven and let it rest for 5 minutes. Drizzle the remaining 2 tablespoons of honey over the top, sprinkle with the remaining thyme leaves, and finish with a pinch of flaky sea salt.
  10. Serve immediately with your chosen dippers.

Notes

For best results, keep the pastry cold. If your kitchen is warm, pop the wrapped brie in the fridge for 10 minutes before brushing with egg wash and baking. Don’t skip the 5-minute rest after baking—it allows the cheese to settle. You can assemble the wrapped brie up to 24 hours in advance and keep it covered in the refrigerator; add an extra 2-3 minutes to the baking time.
