  • 1 cup light corn syrup
  • 3 large eggs, lightly beaten

  • 1 1/2 cups pecan halves, toasted

  • Vanilla bean ice cream for serving
  • Optional: caramel sauce, whipped cream, flaky sea salt

Instructions

  1. Preheat oven to 350°F (175°C). Place a 9×13-inch baking dish in the oven to warm.
  2. Melt 1/2 cup unsalted butter and set aside to cool slightly.
  3. In a large bowl, whisk together flour, granulated sugar, baking powder, and salt. Add milk and 1 teaspoon vanilla extract; whisk until smooth (batter will be thin).
  4. Carefully remove the warm baking dish from the oven. Pour the batter into the dish without stirring. Pour the melted butter evenly over the batter. Do not stir.
  5. In a separate bowl, whisk together brown sugar, corn syrup, beaten eggs, 2 teaspoons vanilla extract, and cinnamon (if using). Stir in pecan halves.
  6. Gently spoon or pour the pecan mixture over the batter in the dish. Do not stir.
  7. Bake for 40-45 minutes, until top is golden brown and center is set but slightly jiggly. If browning too quickly, tent with foil at 30 minutes.
  8. Let cool for 10 minutes before serving.
  9. Scoop into bowls while warm and top with a generous scoop of vanilla bean ice cream.

Notes

Don’t overmix the batter. The butter trick (pouring melted butter over batter without stirring) is essential for a crispy crust. Toast pecans for deeper flavor. Let cobbler rest 10 minutes before serving. For variations, try adding chocolate chips, bourbon, or substituting maple syrup for corn syrup.
