  • 2 large Honeycrisp apples, sliced
  • 2 firm Bosc pears, sliced
  • 1 pomegranate, seeds removed
  • 1 cup seedless red grapes, in small clusters
  • 1/2 cup dried figs, halved (optional)
  • 8 oz brie cheese, at room temperature
  • 6 oz aged sharp cheddar, sliced
  • 4 oz goat cheese log, sliced into rounds
  • 4 oz prosciutto, thinly sliced
  • 4 oz salami, sliced into thin rounds
  • 1/3 cup Marcona almonds
  • 1/4 cup pumpkin seeds, toasted
  • 1/3 cup honey
  • 1 small baguette, sliced and lightly toasted
  • 1/3 cup whole grain mustard
  • Fresh rosemary sprigs for garnish (optional)

Instructions

  1. Prepare your fruit: Wash and dry all fruit thoroughly. Slice the apples and pears into thin wedges—about 1/4 inch thick. If you’re worried about browning, toss the apple slices with a little lemon juice. Remove the seeds from the pomegranate. Cut the grapes into small clusters of 3-4 grapes each.
  2. Prepare your cheese: If your brie is in a wheel, leave it whole or cut it into wedges. Slice the cheddar into thin triangles or rectangles. Slice the goat cheese log into rounds about 1/2 inch thick. Arrange all cheese on a plate and let it sit at room temperature while you prepare the rest.
  3. Arrange the bowls first: Place your small bowls on the board first. Put the honey in one bowl, the whole grain mustard in another, and the pomegranate seeds in a third. Space them out evenly across the board.
  4. Place the cheese: Arrange the cheese around the bowls. Place the brie in a prominent spot. Put the cheddar and goat cheese at opposite ends of the board. Leave space between cheese types.
  5. Add the meats: Drape the prosciutto in loose folds near the brie. Arrange the salami slices in a slight overlapping pattern near the cheddar. Fold some slices in half for visual interest.
  6. Fill in with fruit: Place the apple and pear slices in fan patterns or small piles around the board. Tuck grape clusters into empty spaces. Scatter the dried figs around the cheese.
  7. Add the crunch: Sprinkle the Marcona almonds and toasted pumpkin seeds into small piles in the remaining empty spaces. Keep them clustered so guests can pick them up easily.
  8. Finish with garnishes: Tuck fresh rosemary sprigs around the edges of the board for a pop of green. Drizzle a tiny bit of honey over the brie if desired. Place the baguette slices in a basket or on the edge of the board.

Notes

Slice fruit just before serving to prevent browning. Let cheese come to room temperature for best flavor. For a gluten-free option, use gluten-free crackers or cucumber rounds instead of baguette. For a vegan option, replace cheese with vegan alternatives and use smoked tofu or marinated mushrooms instead of prosciutto.
