Ingredients

Scale
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup pumpkin puree (100% pumpkin)
  • 1/4 cup tahini
  • 3 tablespoons maple syrup
  • 1 tablespoon coconut oil, melted
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2–3 tablespoons water
  • 1 large apple (Honeycrisp or Fuji), sliced
  • 1 large pear (Bartlett or Bosc), sliced
  • 1 cup seedless grapes
  • 1/2 cup dried cranberries (unsweetened preferred)
  • 1/2 cup raw pecans
  • 1/2 cup raw almonds
  • 1/4 cup dark chocolate chips or chopped dark chocolate (70% cocoa or higher)
  • 1/4 cup pumpkin seeds (pepitas)
  • 4–6 Medjool dates, pitted
  • 2 tablespoons almond butter or peanut butter
  • Fresh rosemary or sage sprigs for garnish (optional)

Instructions

  1. Make the Pumpkin Spice Hummus: Add drained chickpeas, pumpkin puree, tahini, maple syrup, melted coconut oil, pumpkin pie spice, cinnamon, and salt to a food processor. Blend until smooth, scraping down sides as needed. With motor running, add water one tablespoon at a time until smooth and dippable. Transfer to a bowl and sprinkle extra pumpkin pie spice on top.
  2. Toast the Nuts: Add pecans and almonds to a dry skillet over medium heat. Toast for 3-4 minutes, shaking frequently, until fragrant and slightly darker. Pour onto a plate to cool.
  3. Prep the Fruit: Core and slice apple and pear into thin wedges. Wash grapes and pat dry. Optionally toss apple and pear slices with lemon juice to prevent browning.
  4. Stuff the Dates: Slice each date open along one side and remove pit. Spoon a little almond butter into each cavity and press closed.
  5. Assemble the Board: Place bowl of pumpkin spice hummus in a prominent spot on a large board or platter. Add small bowl of almond butter if using. Arrange fruit, nuts, seeds, dried cranberries, and dark chocolate around bowls in clusters. Fan out apple and pear slices. Scatter toasted nuts and pumpkin seeds to fill gaps. Tuck stuffed dates in a corner. Garnish with rosemary or sage if desired.
  6. Serve Immediately: Enjoy at room temperature for best texture and flavor.

Notes

Hummus can be made up to 3 days ahead and stored in the fridge. Let it sit at room temperature for 15 minutes before serving. For nut-free version, skip pecans and almonds and add more seeds or dried fruit. If dates are dry, soak in warm water for 10 minutes before stuffing. Use a wide, shallow bowl for hummus for easy dipping.
