Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Clean your pumpkin seeds: separate seeds from pumpkin guts, rinse under cool water, and remove stringy bits.
  3. Dry the seeds thoroughly: spread on a clean towel and pat dry. Let sit for 5 minutes to air dry.
  4. Melt the butter in a small microwave-safe bowl or on the stovetop. Let cool for a minute.
  5. Mix the coating: in a small bowl, combine granulated sugar, ground cinnamon, and salt. Stir with a fork. Add vanilla extract to melted butter if using.
  6. Combine everything: place dried pumpkin seeds in a medium bowl. Pour melted butter over them and toss until coated. Sprinkle cinnamon sugar mixture over and stir again.
