Instructions

  1. Make the herb butter: In a small bowl, combine the softened butter, chopped parsley, rosemary, thyme, minced garlic, salt, pepper, and lemon zest. Mix with a fork until well combined and forms a green-flecked paste.
  2. Prep the chicken: Remove the chicken from packaging and pat it completely dry with paper towels, inside and out. Remove any giblets or neck from the cavity. Let sit on a plate while preparing vegetables.
