These no-bake granola bar bites are chewy, chocolatey, and ready in 20 minutes. Made with simple pantry ingredients like oats, peanut butter, honey, and chocolate chips, they’re perfect for busy weeknights, after-school snacks, or post-workout fuel.

  • 2 cups rolled oats (old-fashioned)
  • ½ cup creamy peanut butter
  • ⅓ cup honey
  • ½ cup mini chocolate chips
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Line an 8×8 inch baking dish with parchment paper, leaving overhang on two sides.
  2. Melt the peanut butter and butter together in a small microwave-safe bowl. Microwave for 30 seconds, stir, then microwave for another 15 seconds until smooth.
  3. Stir in the honey and vanilla extract into the warm peanut butter mixture until fully combined.
  4. Add the rolled oats and salt to the wet mixture. Stir until every oat is coated, about 1 minute.
  5. Fold in the mini chocolate chips gently. If the mixture feels too warm, let it sit for 2 minutes before adding the chips.
  6. Transfer the mixture to the lined dish. Spread evenly with a spatula, then press down firmly using the back of a measuring cup or your hands.
  7. Refrigerate for at least 2 hours (overnight is better) until set.
  8. Lift the bars out using the parchment overhang. Place on a cutting board and slice into 12 even rectangles or 16 squares.

Notes

Press the mixture firmly into the dish to prevent crumbling. Chill completely before cutting. Store in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 3 months. For a vegan version, use maple syrup instead of honey and coconut oil instead of butter. For a nut-free version, use sunflower seed butter.
