  • ¼ cup (50g) granulated sugar
  • ¼ cup (50g) light brown sugar, packed
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • ¾ cup (95g) all-purpose flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (90g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Melt the butter in a microwave-safe bowl for about 30-40 seconds, or in a small saucepan over low heat. Let it cool for 2 minutes.
  3. In a medium mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Stir until it looks like wet sand—about 30 seconds.
  4. Add the egg yolk and vanilla extract to the butter-sugar mixture. Stir vigorously for about 1 minute until lighter in color and slightly thicker.
  5. In a separate small bowl, whisk together the flour, baking soda, and salt.
  6. Add the dry ingredients to the wet ingredients in two additions, stirring gently after each. Mix just until no streaks of flour remain.
  7. Fold in the chocolate chips with your spatula. Reserve a handful to press into the tops of the dough balls later.
  8. Cover the bowl with plastic wrap and refrigerate for 15 minutes.
  9. Scoop the dough into 6-8 equal portions, about 1.5 tablespoons each. Roll them into balls and place them 2 inches apart on the prepared baking sheet. Press a few reserved chocolate chips into the tops of each dough ball.
  10. Bake for 9-11 minutes at 350°F. The cookies should look golden around the edges but still soft and slightly underdone in the center.
  11. Let the cookies cool on the baking sheet for 5 minutes. Then transfer to a cooling rack to cool completely.

Notes

For best results, use room temperature ingredients. The 15-minute chill is essential for chewy cookies. Do not overbake; cookies will continue to set on the hot pan. Store in an airtight container for up to 5 days.
