This lemon dill salmon is a quick and elegant dish that comes together in under 20 minutes. It’s perfect for impressing guests or a simple weeknight dinner, with tender, flaky salmon and bright, herby flavors.

  • 4 salmon fillets (6 ounces each, skin-on or skinless)
  • 2 tablespoons olive oil
  • 1 large lemon (zest and juice)
  • 3 cloves garlic, minced
  • 2 tablespoons fresh dill, chopped (or 2 teaspoons dried dill)
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper, freshly ground
  • Optional: 2 tablespoons capers
  • For garnish: fresh lemon slices, extra fresh dill sprigs, flaky sea salt

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil. If using foil, lightly grease it with olive oil.
  2. In a small bowl, combine 2 tablespoons olive oil, the zest of 1 lemon, 2 tablespoons fresh dill (chopped), 3 minced garlic cloves, ½ teaspoon salt, and ¼ teaspoon black pepper. Stir until it forms a thick, fragrant paste.
  3. Pat the 4 salmon fillets dry with paper towels. Place them skin-side down on the prepared baking sheet, spacing them about 2 inches apart.
  4. Spoon the lemon dill mixture evenly over the top of each fillet. Use the back of the spoon to spread it into a thin layer. Arrange thin lemon slices on top if using.
  5. Optional: Sprinkle 2 tablespoons capers over the fillets.
  6. Bake for 12 to 15 minutes, depending on thickness. For 1-inch thick fillets, 13 minutes is usually perfect. Salmon is done when it flakes easily with a fork and internal temperature reaches 125°F to 130°F (52°C to 54°C) for medium.
  7. Remove from oven and let rest for 2 to 3 minutes.
  8. Sprinkle with fresh dill sprigs and a pinch of flaky sea salt. Squeeze extra lemon juice over the top if desired. Serve warm.

Notes

Pat the salmon dry for better browning. Don’t overcrowd the pan. Let salmon rest before serving. Prep the lemon dill mixture up to 24 hours in advance. For frozen salmon, thaw completely and pat dry. Use a thermometer for perfect doneness.
