This easy one-bowl banana nut bread is incredibly moist with pure banana flavor and a beautiful sugary crackle on top. It’s the perfect solution for busy weeknights when you need a comforting, delicious treat without a lot of effort.

Ingredients

Scale
  • 3 ripe bananas (about 1 ½ cups mashed)
  • ½ cup (100g) granulated sugar
  • ⅓ cup (75g) unsalted butter, melted
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (60g) walnuts, toasted and chopped

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray. Line with parchment paper, leaving a sling over the long sides.
  2. In a large mixing bowl, mash the bananas with a fork or potato masher until mostly smooth with a few small lumps.
  3. Add the sugar and melted butter to the mashed bananas. Stir vigorously until well combined and slightly glossy.
  4. Add the egg and vanilla extract. Stir until fully incorporated and smooth.
  5. Sprinkle the flour, baking soda, and salt evenly over the wet mixture. Stir gently with a few broad strokes until no streaks of flour remain. Do not overmix; a few small lumps are fine.
  6. Fold in the toasted and chopped walnuts with 2-3 strokes.
  7. Pour the batter into the prepared loaf pan and spread evenly. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If browning too quickly, tent with foil for the last 15 minutes.
  8. Remove from oven and let cool in the pan on a cooling rack for 10-15 minutes. Use the parchment sling to lift the bread out and transfer to the rack to cool completely before slicing.

Notes

Use heavily spotted, almost black bananas for the best flavor and sweetness. Do not overmix the batter once flour is added to avoid tough bread. Let the bread cool completely before slicing to prevent crumbling. Store tightly wrapped at room temperature for up to 4 days, or freeze for up to 3 months.
