  • 4 to 6 bone-in, skin-on chicken thighs (about 2 pounds total)
  • 4 tablespoons unsalted butter
  • 6 to 8 cloves garlic, minced
  • 6 to 8 sprigs fresh thyme
  • 1/2 cup low-sodium chicken broth
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (optional garnish)
  • Lemon wedges (for serving)

Instructions

  1. Pat the chicken thighs dry with paper towels. Season both sides generously with salt and pepper. Let sit at room temperature for 10 minutes.
  2. Place a large skillet over medium heat and add olive oil. Swirl to coat. Place chicken thighs skin-side down in the cold skillet, then turn on the heat.
  3. Cook undisturbed for 7 to 8 minutes until skin is deep golden and crispy. Flip and cook for another 5 minutes.
  4. Reduce heat to medium-low. Add butter, minced garlic, and thyme sprigs. Stir garlic into butter for about 1 minute until fragrant.
  5. Pour in chicken broth and lemon juice. Scrape up browned bits from the pan. Simmer gently for 3 to 4 minutes, spooning sauce over chicken.
  6. Check internal temperature: 165°F to 170°F. If needed, cook 2 to 3 more minutes.
  7. Remove from heat. Let rest in pan for 5 minutes. Sprinkle with parsley and serve with lemon wedges.

Notes

Start chicken skin-side down in a cold skillet for extra crispy skin. Don’t crowd the pan; cook in batches if doubling. Watch garlic carefully to avoid burning. Let chicken rest 5 minutes before serving. Leftovers taste even better the next day.
