A quick and easy salted caramel apple crisp with a crunchy oat crumble topping, made in under 45 minutes with simple pantry ingredients. Perfect for weeknight desserts.

Ingredients

Scale
  • 6 medium apples (about 2 pounds or 900g), preferably Honeycrisp or Granny Smith
  • 3 tablespoons granulated sugar (36g)
  • 1 tablespoon lemon juice (15ml)
  • 1 teaspoon ground cinnamon (2.5g)
  • ¼ teaspoon salt (1.5g)
  • 2 tablespoons all-purpose flour (16g)
  • 1 cup old-fashioned rolled oats (90g)
  • ½ cup all-purpose flour (60g)
  • ½ cup packed brown sugar (100g)
  • ½ teaspoon ground cinnamon (1.25g)
  • ¼ teaspoon salt (1.5g)
  • ½ cup unsalted butter (113g), cold and cut into small cubes
  • ½ cup store-bought salted caramel sauce (about 120ml)
  • Flaky sea salt (like Maldon) for finishing

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Wash apples, cut into quarters, remove cores, and slice each quarter into ½-inch chunks. Do not peel.
  3. In a large bowl, toss apple chunks with granulated sugar, lemon juice, cinnamon, salt, and flour until coated. Let sit while making topping.
  4. In a separate large bowl, combine rolled oats, flour, brown sugar, cinnamon, and salt. Whisk to break up clumps.
  5. Add cold butter cubes. Using a pastry blender or fingertips, work butter into dry ingredients until mixture resembles coarse meal with pea-sized butter pieces. Do not overwork.
  6. Transfer apple mixture to a 9-inch square baking dish or 10-inch cast iron skillet. Spread evenly.
  7. Drizzle half of the salted caramel sauce (about ¼ cup) over the apples. Do not stir.
  8. Sprinkle oat crumble evenly over the top, squeezing some between fingers to create larger clumps.
  9. Place dish on a baking sheet. Bake for 30-35 minutes, until filling is bubbly and topping is golden brown. If topping browns too quickly after 20 minutes, tent loosely with foil.
  10. Remove from oven and let cool for 5 minutes.
  11. Drizzle remaining salted caramel sauce over the top. Sprinkle with flaky sea salt.
  12. Serve warm, optionally with vanilla ice cream or whipped cream.

Notes

For a gluten-free version, use gluten-free all-purpose flour and certified gluten-free oats. For dairy-free, substitute cold coconut oil or vegan butter. For a lower-sugar option, reduce brown sugar to ⅓ cup and use sugar-free caramel sauce. Let the crisp rest 5 minutes before serving to allow the filling to set. Store leftovers covered in the refrigerator for up to 5 days; reheat in the oven or air fryer for best crunch.
