These soft, chewy pumpkin chocolate chip cookie bars are made in one bowl with simple ingredients. They have crispy edges, a tender center, and are perfect for fall gatherings or any time a cookie craving hits.

  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/4 cup dried cranberries (optional)
  • 1 tablespoon chia seeds or flax seeds (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang on two opposite sides.
  2. Melt the butter in a microwave-safe bowl in 20-second bursts until just melted. Set aside to cool slightly.
  3. In a large mixing bowl, whisk together melted butter, brown sugar, and granulated sugar until well combined. Add pumpkin puree, egg, and vanilla extract; whisk until smooth.
  4. In a separate small bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
  5. Pour dry ingredients into wet ingredients and stir with a rubber spatula until just combined. Fold in rolled oats and chocolate chips (reserve a handful of chips for topping).
  6. Scrape dough into prepared pan and spread evenly. Press reserved chocolate chips into the top.
  7. Bake for 25-30 minutes, until a toothpick inserted in the center comes out with a few moist crumbs. Edges should be golden brown.
  8. Cool in the pan on a wire rack for 20 minutes, then use parchment overhang to lift out and cool completely before cutting into squares.

Notes

For best texture, use old-fashioned rolled oats, not quick oats. If pumpkin puree looks watery, blot with paper towels before adding. Let bars cool completely before cutting to prevent crumbling. Bars taste even better on day two.
